A Raisin in the sun (It's a Mama-on-the-sofa play. But the actress that plays the role in the old movie version has more fun with it than all of the criticism suggest).
Fences
Streetcar Named Desire (Although I don't sympathize with Stanley Kowalski as many college professors wants us to).
"A Doll's House" (An ending just as effective today as it probably was way back when)
I know you didn't ask for a short story. But Harold Bloom once said that people don't read short stories nowadays, yet they are so much better than novels. He's right. Read Joyce Carol Oates story, "The Goose Girl," a story that touched me deeply, especially the final sentence.

So many good ones on these lists! I feel the library calling to me...

On the more serious side:
Arcadia (Tom Stoppard)
Inherit the Wind (Jerome Lawrence and Robert E Lee)
The Night Thoreau Spent in Jail (also Lawrence and Lee)
The Guys (Anne Nelson)

On a lighter note:
Charley's Aunt (Brandon Thomas)
Harvey (Mary Chase)
The Foreigner (Larry Shue)
Blithe Spirit (Noel Coward)
Inspecting Carol (Daniel Sullivan et al)
Noon (Terrence McNally)

Any of Stephen Wadsworth's Marivaux adaptations (Changes of Heart; The Game of Love and Chance; Triumph of Love)

I'm glad someone mentioned Arcadia, which I love. The whole thing is great, but the ending in particular is absolutely perfect. It has some vague structural and subject similarities with one of my favorite novels, Possession, by A. S. Byatt.

The Importance of Being Earnest, Copenhagen, and Macbeth are a few more of my favorites. It would be very hard to choose one.

I've acted in a lot of Irish plays lately -- two of my faves in that vein are "Dancing at Lughnasa" and "The Weir." I also liked "Lilies of the Field" (even though no parts in that one for me).

Ditto to all who said "Angels in America."

For some old-time fun, pick up "Arsenic and Old Lace" or "The Philadelphia Story."

almostxfamous: VERY surprised to hear Bang Bang, You're Dead (pleasantly surprised, that is). I love that play, but it needs to be done more! Very emotional...

others include:

Torch Song Trilogy
Noises Off
The Normal Heart
Rumors
Charlie's Aunt
Don't Drink the Water
Laughter on the 23rd Floor
The Man Who Came to Dinner
Blithe Spirit
Private Lives

I was rather unpleasantly surprised by "Brighton Beach Memoirs" though, I don't think it was Simon's best work. I could go for Rumors, Fools, or Laughter on the 23rd Floor any day though :)

I hold a degree in Musical Theatre from Montclair State University. It is useless. Now I'm funny for money. Oh, and I sing.

Of the aforementioned: Angels in America, Rumors, A Long Day's Journey Into Night, Metamorphoses, anything by Arthur Miller.

Extremely surprised that no one has mentioned Homebody/Kabul, so, yay, I get to. Plus the following:
Arabian Nights by Zimmerman
I Am My Own Wife by Doug Wright
Unwrap Your Candy by Doug Wright
Well, just anything by Doug Wright and Mary Zimmerman!

I really love "Inherit the Wind" by Jerome Lawrence and Robert E Lee.

It's beautiful, and still so relevant in today's world.
